Caponata Casereccia di Melanzane

"Caponata" is a traditional dish prepared with fried aubergines, celery, olives, capers and onions in a tomato sauce and simply seasoned with olive oil, vinegar and salt.

Served as a side dish or as an appetizer. Try it with freshly baked crunchy bread!
